CORE TEMPERATURE AND DELTA FUNCTION
A core temperature sensor can ensure you a perfect ready-made product - EVERY TIME. Put the skewer in the roast beef and select the desired core temperature. The industrial oven takes care of the rest and alerts you when the product is ready to be served. The delta function is another smart function that some core temperature ovens also possess. With the delta function you can determine how many degrees the oven chamber temperature must exceed the product temperature.
Example: You want your product to end up with a final temperature of 150 degrees, but want a long-term frying or a slow process, so you want a maximum of the oven chamber temperature to be 20 degrees higher than the product. You insert a product with a temperature of 30 degrees and the oven chamber is thus a maximum of 50 degrees. As the temperature of the product increases, the temperature of the oven chamber will also increase.
