BOILING, HEATING & FRYING
GENERAL ABOUT COOKING SERIES
When talking 600-700-900 series, it is in fact the depth you are looking at. A 600 series is always 60 cm in depth, a 700 series is always 70 cm in depth and a 900 series is always 90 cm in depth.
When the depth is found, one then speaks as single, double or triple units of 30-40 cm width. It is easiest to understand if we are talking, for example, a frying plate, which will have 1, 2 or 3 zones, respectively, and be correspondingly wide (eg 40-80-120 cm. Wide).
In addition, there are a number of "obsolete" devices that are not part of an actual series. It could be a sausage roaster, a table model of a roasting plate or similar. A new trend that is gaining more and more traction is to use a low cooling table or freezer table during the cooking series. That way, you have the ingredients at hand when they need to be cooked. It could be, for example, a drawer with frozen french fries during the fryer or a door with a fridge filled with fresh steaks for the burger.
GAS OR EL
We are often asked what to choose. Most people lean towards electricity because it is easy and reliable - with the exception of the cooking table and grill, which we most often sell for gas. Our experience says that there is more maintenance on gas because nozzles, sleepers and burners must be cleaned to a much greater extent than with electrical equipment where the heaters are more encapsulated.
Conversely, a KW heat is cheaper to make via GAS than it is via EL, which is why it obviously pulls in the other direction. Especially with gas equipment, however, we must note that it pays more to pay a little more for the product because it means a lot for the quality, reliability and durability of the equipment. In addition, also for the ease of cleaning. Quality and price also go hand in hand on electrical equipment, but here the difference is a little smaller and you can also get a pretty decent piece of equipment
for a relatively low price.
GAS TYPES, INSTALLATION AND APPROVALS
All our equipment is approved for both natural gas and bottled gas. A large number of Fagor's products are also approved for city gas. It is very important if you buy gas equipment from Germany, Sweden or other online retailers that you have control of the gas types in Denmark. In Germany and many other EU countries, the same gas pressure on gas cylinders is not used as we use in Denmark.
If you do not have control over this, the equipment is actually illegal to use - and fire ifbm. for example. insurance case will present a major challenge in terms of compensation. Remember that gas equipment must be approved, tested and regulated by an authorized gas fitter before it can be legally used.
THE GOOD GRILL (GAS & EL)
The trend within barbecue is that the lava rocks disappear or disappear. Most manufacturers now make water grills or grills produced without the lava stones. However, many people still love the good barbecue taste that is associated with the smoke and fire that occurs when fat lands on the lava rocks.
We also see more and more grills for electricity on the market. These are very cleaning friendly and reliable and are therefore worth considering as well.
FRYING PLATES (GAS & ELECTRICITY)
A good frying plate has a strong cast iron frying surface and strong heaters. The best roasting plates we have in the range come from Fagor and Danish FKI (the grill bars' favorite). If you want it to be extra good and cleaning friendly, go for a hob with Chrome coating. It provides a non-slip surface which gives a really nice frying result and easy cleaning.
Our frying pans from Sybo and Asber are our most popular frying pans - here you get a lot for your money. If you are going to fry sausages on the frying plate, it is important that it does not have too many kw - then the sausages will crack. Conversely, if you are going to fry a lot of frozen steaks, it is very important that you choose one with many kw, so that the steak is fried and not boiled in its own water.
fryer
There are many different fryers. If you need a gas fryer, our undisputed favorite from Fagor. We use this model in our own rental department because in our opinion it is the only one that can really withstand a massive pressure.
If we are instead over in electric fryers, the possibilities are many - here are really good offers at a more budget-friendly price. Some people mistakenly believe that it is solely the amount of oil that determines how fast the fryer is. In fact, it is essential to look at how many kw there are per. liters of frying oil - it tells something about the actual effect in relation to content.
If you choose a fryer with too low an effect in relation to your needs, you will find that the oil cools down when frozen fries come in again and again.
fries into the tub. This means that your french fries absorb the oil and become sloppy instead of crispy and sharp. In addition, of course, the fact that the cooking time will be much longer.
TURBO COOKING EREN
For the busy burger bar or take-away place, we recommend Turbostegeren. This frys from top to bottom and gives a uniform result - and in half the time. The king of turbo roasters is without a doubt Danish FKI, but we have found a really affordable alternative from our good supplier RM Gastro.
BOILING TABLE (GAS & EL)
A cooking table is almost indispensable in any kitchen. Some use it more than others. Most people want an industrial induction hob, but such a hob costs around DKK 50.000.
if there is to be a strong effect and 4 burners.
The best alternative to this is a gas cooking table - here you get the same instant regulation of the effect. From zero to full flame in a split second.
